5 Fabulous GFDF (Gluten free dairy free) desserts for festivals and celebrations

What is a festival “Jismain Muh Meetha na ho?”

Keeping this thought in mind I have come up with 5 Gluten free dairy free desserts that would sweeten any occasion without the burden of any guilt. Lot of people are sampling with the GFDF diet and this would surely come as a whiff of fresh air for them. At the same time it would be a change from the usual for the rest.

Before I get started just a quick word about GFDF – As the name suggests it is a gluten (the protein found in wheat, barley, rye & their products) free and dairy (milk and milk products) free diet.


Peanut coconut burfi

Ingredients

1 cup roasted peanuts with skin removed

1/3 cup powdered jaggery

Coconut powder for coating

Method

In a blender add the peanuts and jaggery. Keep pulsing the mixture for few seconds and checking till you get a mixture which binds when pressed together. Now pour the mixture in a greased tray. Sprinkle with coconut powder. Let set and then cut into burfi shapes. Alternatively, you could also shape them into round laddoos coated with coconut powder.


Almond saffron laddoos

Ingredients

1 cup almond flour or powder

¼ to ½ cup coconut milk (depending on coarseness of the almond powder)

4-5 strands saffron dipped in the coconut milk for 1 hour

Almond milk to adjust consistency

Method

Mix the almond powder with the saffron infused coconut milk. Keep aside for 30 minutes. Adjust the consistency with the almond milk. Keep in the refrigerator for 30 minutes. Take out and shape into laddoos. Garnish with chopped almonds and saffron strands.


Mango chia coconut kheer

Ingredients

1 cup coconut milk

2 tsp chia seeds

2 tsp mango pulp

Method

In a small transparent glass place 1 tsp chia seeds at the bottom. Now top it up with ½ cup coconut milk followed by 1 tsp of mango pulp. Set aside in the refrigerator to set.

Once set, garnish with mango slices and slivers of almonds


Peanut Chocolate Rocks

Ingredients

1 cup coarsely crushed peanuts

½ cup melted dark chocolate

½ cup melted white chocolate

Method

In a pan lightly roast the peanuts. Once aromatic, remove from heat and divide in two portions. To 1 portion add the dark chocolate and to the other white chocolate.

Now set a tray lined with parchment paper.

Take a spoon and keep dropping spoonful mixtures on the tray to form rock like structures.

Set in the refrigerator for 5-7 hours.

Garnish with gold food grade glitter or sprinkles


Rose chocolate coco spheres

Ingredients

½ cup coconut powder

½ cup melted chocolate of choice

½ tsp Rose essence

Method

In a bowl, mix the above ingredients. When a little warm shape them into spheres and coat with coconut powder.
