This recipe is made with 1 brinjal and when taken as an appetizer it will serve 3 while if taken as a meal it can serve 1 - 2 people.
Ingredients
1 large Round Brinjal
2 Tomatoes sliced thinly to yield half the number of brinjal slices
Cheese sliced thinly to yield half the number of brinjal slices (preferably mozzarella or any cheese of choice)
4 garlic cloves chopped
Salt and pepper to taste
Olive oil for drizzling
Method
Wash and dry the brinjal.
Keeping the stem intact, make thin slices of the brinjal, making incisions almost 2/3rd way upwards such that the brinjal slices stay intact with the whole brinjal.
Rub the slices with salt and keep aside for 30 minutes to 1 hour.
Pre-heat the oven to 200 °C.
Wash and squeeze the brinjal gently to remove excess salt water.
Place tomato slices and cheese slices alternatively in between brinjal slices.
Place on a baking tray and drizzle with olive oil and garlic pieces.
Sprinkle with salt and pepper to taste
Bake in the oven for 30 – 40 minutes depending on the brinjal size and the efficiency of the oven.
It is best to keep a check on the doneness of the brinjal after 25 – 30 minutes.
Serve hot garnished with chopped parsley or basil or coriander.
