Brinjal Tomateese Flower


This recipe is made with 1 brinjal and when taken as an appetizer it will serve 3 while if taken as a meal it can serve 1 - 2 people.


Ingredients


  • 1 large Round Brinjal

  • 2 Tomatoes sliced thinly to yield half the number of brinjal slices

  • Cheese sliced thinly to yield half the number of brinjal slices (preferably mozzarella or any cheese of choice)

  • 4 garlic cloves chopped

  • Salt and pepper to taste

  • Olive oil for drizzling


Method


  • Wash and dry the brinjal.

  • Keeping the stem intact, make thin slices of the brinjal, making incisions almost 2/3rd way upwards such that the brinjal slices stay intact with the whole brinjal.

  • Rub the slices with salt and keep aside for 30 minutes to 1 hour.

  • Pre-heat the oven to 200 °C.

  • Wash and squeeze the brinjal gently to remove excess salt water.

  • Place tomato slices and cheese slices alternatively in between brinjal slices.

  • Place on a baking tray and drizzle with olive oil and garlic pieces.

  • Sprinkle with salt and pepper to taste

  • Bake in the oven for 30 – 40 minutes depending on the brinjal size and the efficiency of the oven.

  • It is best to keep a check on the doneness of the brinjal after 25 – 30 minutes.

  • Serve hot garnished with chopped parsley or basil or coriander.

  • Taste a piece of heaven!
