Chia Coconut Pudding
Lactation is a beautiful phase in the life of a mother as well as the baby. It is a highly emotional time which gives space and time for the two to bond. Mostly it goes seamlessly, but at times some women face issues while breastfeeding like the baby not able to latch, improper emptying of breasts, inadequate production of breastmilk etc.
Traditionally, in many households, lactating mothers are given foods prepared with special ingredients called galactagogues which are known to boost breastmilk production and provide the mother with the much needed nutrition and energy required to feed the baby.
Below is a quick, easy and nutrient dense recipe which is highly beneficial for lactating mothers. The chia seeds provide the good fats as well as the dietary fiber, fennel seeds are known galactagogues and great for digestion, almonds are rich in omega fats as well as a galactagogue and finally coconut milk which imparts a mild sweetness plus provides the Medium chain fatty acids good fats while being a galactagogue.
Ingredients
2 tsp chia seeds
1/4 cup coconut milk
2 almonds chopped
1 pinch of fennel powder
Method
Combine all the ingredients and set aside to set in the refrigerator for 3-4 hours or overnight. Garnish with chopped nuts and fennel. Indulge in the richness and goodness.
This is one recipe that can be enjoyed by everybody as a non-sweetened dessert with a blast of flavours and being nutritionally rich.
