Lucknawi style Vegetarian Kebab
I grew up in the "City of Nawabs", Lucknow and am easily identifiable with my "Lehza" or way of speaking no matter wherever in the world I may be. The "aap" and "pehle aap" are very dear to my heart.
Kebabs is a food synonymous with Lucknow albeit non-vegetarian varieties like the galawati kebab, which tops the charts. Nevertheless, being a vegetarian one should not be at a disadvantage. So here I am presenting the Vegetarian kebabs from a Lucknawi.

Nawabi Vegetarian Kebabs
Ingredients
To be boiled together in pressure cooker
1 cup chana dal soaked overnight
1/2 cup bottle gourd
1 tsp garam masala
1 inch ginger
4 garlic cloves
1 badi elaichi
1/2 inch cinamon stick
1/4 cup water
For mixing later on
1 cup finely chopped onions
1/4 cup fresh coriander leaves
3 finely chopped green chillies (optional)
1/4 cup finely chopped veggie of choice
Method
Wash and boil the ingredients together with minimum water. Four whistles should be fine.
Pick out the badi elaichi and cinnamon stick.
Blend into a fine paste in a mixer with no added water or 1 tsp if difficult to blend.
Add the remaining ingredients.
Shape into flattened disks like kebabs and cook on a flat tawa.
Serve the kebabs with mint/coriander chutney or mint raita.
